Porchetta Cooked in a Wood-Fire Over with Head

Recognised among the Traditional Agricultural Food Products of Tuscany (PAT), the Porchetta di Monte San Savino has always been one of the highest expressions of our artisanal tradition. In the version with head, the original ritual of the whole porchetta is preserved, prepared with extreme care, according to a recipe kept for over sixty years.

Each pig, of national origin, is processed entirely by expert hands, seasoned with an essential mix of salt, unpeeled garlic, pepper, rosemary and herbs from the Tuscan hills – including wild fennel, the unmistakable signature of our aromas. Cooking takes place in a wood-fired oven, fed with local Erica scoparia, which gives the crust the right crunchiness and a natural aroma, without any additions.
