Recognised among the Traditional Agri-food Products of Tuscany, the Porchetta di Monte San Savino has always been one of our products of excellence. The ancient flavour of tradition is revived thanks to a unique recipe of its kind which, the result of over sixty years of experience, guarantees intense taste, unmistakable aroma, crunchiness of the crust and tenderness of the meat.
Whole pigs or pork torsos are expertly processed by master butchers and flavoured with a mix of salt, poached garlic, rosemary, pepper, aromatic herbs and the characteristic flower of the wild fennel of our hills. The slow and patient cooking takes place strictly in wood-fired ovens heated with local heather, thus completing the preparation of a product that satisfies everyone, eaten in a sandwich or in elaborate recipes.
